J\u2019avais envie de fra\u00eecheur, <a href=\"https:\/\/www.larousse.fr\/articles\/cuisine\/langoustines-flambees-au-grand-marnier-la-recette-qui-transforme-un-diner-classique-en-show-gastronomique\">de mer<\/a>, mais aussi de cette&nbsp;<strong>gourmandise terrienne<\/strong>&nbsp;qu\u2019on retrouve dans le foie gras. R\u00e9sultat ? Un mariage inattendu entre la&nbsp;<strong>lotte nacr\u00e9e<\/strong>, la&nbsp;<strong>sauge parfum\u00e9e<\/strong>, un&nbsp;<strong>crumble au foie gras croustillant<\/strong>, et la douceur rustique des&nbsp;<strong>panais<\/strong>.<\/p>\n\n\n\n<p>Ce que j\u2019aime dans cette recette, c\u2019est son&nbsp;<strong>\u00e9quilibre de textures et de saveurs<\/strong>, et surtout sa&nbsp;<strong>facilit\u00e9 d\u2019ex\u00e9cution<\/strong>&nbsp;: pas de sauce \u00e0 monter, pas de cuisson complexe. Et le rendu dans l\u2019assiette fait imm\u00e9diatement son effet.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-les-ingredients-pour-un-plat-principal-de-fete-pour-4-a-6-convives\">Les ingr\u00e9dients pour un plat principal de f\u00eate pour 4 \u00e0 6 convives<\/h2>\n\n\n\n<p><strong>Pour le r\u00f4ti de lotte :<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1,2 kg de&nbsp;<strong>queue de lotte<\/strong><\/li>\n\n\n\n<li>50 g de&nbsp;<strong>farine<\/strong><\/li>\n\n\n\n<li>50 g de&nbsp;<strong>parmesan<\/strong><\/li>\n\n\n\n<li>50 g de&nbsp;<strong>foie gras mi-cuit<\/strong><\/li>\n\n\n\n<li>Les&nbsp;<strong>zestes d\u2019un citron bio<\/strong><\/li>\n\n\n\n<li>1&nbsp;<strong>bouquet de sauge<\/strong><\/li>\n<\/ul>\n\n\n\n<p><strong>Pour la pur\u00e9e de panais :<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 kg de&nbsp;<strong>panais<\/strong><\/li>\n\n\n\n<li>60 g de&nbsp;<strong>beurre<\/strong><\/li>\n\n\n\n<li>60 g de&nbsp;<strong>cr\u00e8me fra\u00eeche \u00e9paisse<\/strong><\/li>\n\n\n\n<li><strong>Sel, poivre<\/strong><\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-les-etapes-pour-un-roti-de-lotte-fondant-croustillant-et-joliment-parfume-au-citron\">Les \u00e9tapes pour un r\u00f4ti de lotte fondant, croustillant et joliment parfum\u00e9 au citron<\/h2>\n\n\n\n<ol start=\"1\" class=\"wp-block-list\">\n<li><strong>Pr\u00e9chauffez le four \u00e0 160 \u00b0C.<\/strong>&nbsp;Pelez les panais, coupez-les en rondelles. Faites-les cuire 30 minutes dans de l\u2019eau bouillante sal\u00e9e. Une fois tendres, \u00e9crasez-les au presse-pur\u00e9e. Incorporez le beurre et la cr\u00e8me. Salez, poivrez. R\u00e9servez au chaud.<\/li>\n\n\n\n<li><strong>Pr\u00e9parez le crumble.<\/strong>&nbsp;M\u00e9langez la farine, le parmesan et le foie gras du bout des doigts jusqu\u2019\u00e0 obtenir une texture sableuse.<\/li>\n\n\n\n<li><strong>Taillez la queue de lotte<\/strong>&nbsp;en deux filets. Salez, poivrez, ajoutez les zestes et un filet de jus de citron. Reformez la queue en r\u00f4ti, en la ficelant avec de la sauge fra\u00eeche entre les filets. Recouvrez g\u00e9n\u00e9reusement de crumble.<\/li>\n\n\n\n<li><strong>Placez le r\u00f4ti dans un plat<\/strong>&nbsp;allant au four, enfournez pour 20 minutes \u00e0 160 \u00b0C. Le crumble doit \u00eatre dor\u00e9 et la lotte juste nacr\u00e9e.<\/li>\n<\/ol>\n\n\n\n<p>Laissez reposer 5 minutes avant de trancher. Servez avec une belle cuill\u00e8re de pur\u00e9e de panais, quelques feuilles de sauge et un tour de moulin \u00e0 poivre.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-l-accord-terre-mer-subtil-et-parfume-qui-surprend-et-ravit-a-chaque-bouchee\">L\u2019accord terre-mer subtil et parfum\u00e9 qui surprend et ravit \u00e0 chaque bouch\u00e9e<\/h2>\n\n\n\n<p>Ce plat, c\u2019est le meilleur des deux mondes : le&nbsp;<strong>moelleux iod\u00e9 de la lotte<\/strong>, le&nbsp;<strong>fondant du foie gras<\/strong>, la note vive du citron, et le&nbsp;<strong>velout\u00e9 r\u00e9confortant du panais<\/strong>.
