Elle r\u00e9invente <strong><a href=\"https:\/\/www.larousse.fr\/articles\/cuisine\/ce-plat-mijote-comme-chez-ma-grand-mere-embaume-toute-la-maison-et-fond-sous-la-langue-a-chaque-bouchee\">la polenta<\/a><\/strong> des montagnes avec un geste audacieux : la saisir \u00e0 feu vif apr\u00e8s l\u2019avoir napp\u00e9e de beurre chaud, d\u2019oignons fondants et de sauge croustillante. Ce contraste entre la surface dor\u00e9e et le c\u0153ur moelleux, presque cr\u00e9meux, donne \u00e0 chaque bouch\u00e9e un charme unique.<\/p>\n\n\n\n<p>Le fromage casera, bien pr\u00e9sent mais jamais envahissant, fond au milieu des quenelles de polenta pour offrir des filaments gourmands et des poches de douceur. <a href=\"https:\/\/www.larousse.fr\/articles\/cuisine\/vous-detestez-les-choux-de-bruxelles-cette-tarte-tatin-caramelisee-a-la-burrata-va-vous-faire-changer-davis\">Servie directement dans la po\u00eale<\/a>, cette sp\u00e9cialit\u00e9 s\u2019impose comme un v\u00e9ritable plat de f\u00eate, convivial et g\u00e9n\u00e9reux, parfait pour les longues soir\u00e9es d\u2019hiver pass\u00e9es autour d\u2019une table anim\u00e9e.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-ingredients-pour-4-personnes\">Ingr\u00e9dients pour 4 personnes<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>250 g de farine de ma\u00efs moyenne<\/strong><\/li>\n\n\n\n<li><strong>1,5 litre d\u2019eau<\/strong><\/li>\n\n\n\n<li><strong>Sel<\/strong><\/li>\n\n\n\n<li><strong>200 g de fromage casera AOP<\/strong>&nbsp;(ou fontina, tomme de Savoie)<\/li>\n\n\n\n<li><strong>100 g de beurre<\/strong><\/li>\n\n\n\n<li><strong>1 oignon doux<\/strong><\/li>\n\n\n\n<li><strong>6 \u00e0 8 feuilles de sauge<\/strong><\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-preparation-etape-par-etape\">Pr\u00e9paration \u00e9tape par \u00e9tape<\/h2>\n\n\n\n<ol start=\"1\" class=\"wp-block-list\">\n<li>Portez \u00e0 \u00e9bullition 1,5 litre d\u2019eau sal\u00e9e dans une grande casserole \u00e0 fond \u00e9pais.<\/li>\n\n\n\n<li>Versez la farine de ma\u00efs en pluie, en remuant constamment avec une cuill\u00e8re en bois pour \u00e9viter les grumeaux.<\/li>\n\n\n\n<li>Faites cuire \u00e0 feu doux pendant 45 \u00e0 50 minutes, jusqu\u2019\u00e0 ce que la polenta \u00e9paississe. Attendez qu&rsquo;elle se d\u00e9tache des parois.<\/li>\n\n\n\n<li>Pendant ce temps, dans une petite casserole, faites fondre le beurre avec l\u2019oignon \u00e9minc\u00e9 et les feuilles de sauge. Laissez cuire doucement jusqu\u2019\u00e0 ce que l\u2019oignon soit fondant et l\u00e9g\u00e8rement dor\u00e9, et la sauge croustillante.<\/li>\n\n\n\n<li>Coupez le fromage en petits d\u00e9s.<\/li>\n\n\n\n<li>Formez des quenelles de polenta \u00e0 l\u2019aide de cuill\u00e8res et d\u00e9posez-les dans une grande po\u00eale ou un plat allant sur le feu.<\/li>\n\n\n\n<li>Parsemez de fromage, puis versez le beurre br\u00fblant avec l\u2019oignon et la sauge sur la polenta.<\/li>\n\n\n\n<li>Replacez la po\u00eale sur feu vif quelques minutes : la surface doit gr\u00e9siller et
