Ni cr\u00e8me, ni fromage, juste du beurre et beaucoup de pr\u00e9cision. Le r\u00e9sultat : un plat chaleureux, parfum\u00e9, \u00e0 la fois rustique et raffin\u00e9.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-les-ingredients-essentiels-pour-des-pommes-boulangeres-reussies\">Les ingr\u00e9dients essentiels pour des pommes boulang\u00e8res r\u00e9ussies<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>800 g de pommes de terre<\/strong>, de pr\u00e9f\u00e9rence \u00e0 chair fondante<\/li>\n\n\n\n<li><strong>2 oignons<\/strong>&nbsp;doux<\/li>\n\n\n\n<li><strong>50 g de beurre<\/strong><\/li>\n\n\n\n<li><strong>Bouillon clair<\/strong>&nbsp;de volaille ou de l\u00e9gumes (maison si possible)<\/li>\n\n\n\n<li><strong>Sel<\/strong>,&nbsp;<strong>poivre du moulin<\/strong><\/li>\n<\/ul>\n\n\n\n<p>Ce gratin repose sur une parfaite ma\u00eetrise des textures. Les pommes de terre doivent fondre, mais se tenir. Les oignons ne doivent jamais brunir. Et le bouillon, discret mais pr\u00e9sent, doit infuser le tout avec d\u00e9licatesse. C\u2019est un \u00e9quilibre.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-etapes-de-cuisson-pour-obtenir-un-fondant-dore-et-parfume-a-coeur\">\u00c9tapes de cuisson pour obtenir un fondant dor\u00e9 et parfum\u00e9 \u00e0 c\u0153ur<\/h2>\n\n\n\n<p><strong>1.<\/strong>&nbsp;Pr\u00e9chauffez le four \u00e0 180\u00b0C. \u00c9pluchez et tranchez les pommes de terre en rondelles fines (3 mm environ). \u00c9mincez les oignons.<\/p>\n\n\n\n<p><strong>2.<\/strong>&nbsp;Dans une po\u00eale, faites fondre un peu de beurre et faites revenir les oignons 5 minutes \u00e0 feu doux, sans coloration.<\/p>\n\n\n\n<p><strong>3.<\/strong>&nbsp;Dans un plat beurr\u00e9, alternez : pommes de terre, sel, poivre, oignons, noisettes de beurre et une louche de bouillon chaud.<\/p>\n\n\n\n<p><strong>4.<\/strong>&nbsp;Montez ainsi en couches successives, en terminant par des pommes de terre et un peu de beurre. Versez le reste du bouillon \u00e0 hauteur.<\/p>\n\n\n\n<p><strong>5.<\/strong>&nbsp;Couvrez le plat de papier cuisson ou d\u2019un couvercle, enfournez pour&nbsp;<strong>1 heure<\/strong>&nbsp;: 30 min couvert, puis 30 min \u00e0 d\u00e9couvert pour dorer.<\/p>\n\n\n\n<p><strong>6.<\/strong>&nbsp;Laissez reposer 5 minutes hors du four : le jus se concentre, la texture s\u2019harmonise.
