Mais pour qu\u2019elles soient <a href=\"https:\/\/www.larousse.fr\/articles\/cuisine\/cette-fondue-a-litalienne-transforme-un-plat-dhiver-en-voyage-express-sous-le-soleil-mediterraneen\">parfaitement fondantes<\/a>, une question revient toujours :\u00a0<strong>doit-on pr\u00e9cuire les feuilles de p\u00e2te avant de les enfourner ?<\/strong><\/p>\n\n\n\n<p>Diego Accettulli, chef et ambassadeur de la cuisine italienne sur Instagram, partage la m\u00e9thode transmise par les&nbsp;<strong>mammas italiennes<\/strong>. Pour lui, pas de doute : la <a href=\"https:\/\/www.larousse.fr\/articles\/cuisine\/on-dirait-un-plat-de-chef-le-tartare-de-tomates-sans-cuisson-qui-bluffe-tout-lete\">cuisson id\u00e9ale<\/a> commence bien&nbsp;<strong>avant le passage au four<\/strong>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-des-feuilles-tendres-comme-un-baiser-grace-a-la-precuisson\">Des feuilles tendres comme un baiser gr\u00e2ce \u00e0 la pr\u00e9cuisson<\/h2>\n\n\n\n<p>Dans la tradition italienne, on commence toujours par&nbsp;<strong>pr\u00e9cuire les feuilles de lasagnes<\/strong>. Il suffit de les plonger&nbsp;<strong>une \u00e0 deux minutes dans une eau fr\u00e9missante<\/strong>, puis de les transf\u00e9rer imm\u00e9diatement dans de l\u2019eau froide. On les d\u00e9pose ensuite sur un torchon propre pour les \u00e9goutter.<\/p>\n\n\n\n<p>Cette \u00e9tape permet d\u2019assouplir la p\u00e2te et de raccourcir la cuisson au four. R\u00e9sultat ?&nbsp;<strong>Des lasagnes soyeuses, moelleuses, qui fondent dans la bouche<\/strong>. Et surtout, plus besoin de laisser le plat cuire trop longtemps :&nbsp;<strong>30 \u00e0 40 minutes suffisent<\/strong>&nbsp;pour une cuisson parfaite.<\/p>\n\n\n\n<p>C\u2019est aussi une mani\u00e8re de garder un <a href=\"https:\/\/www.larousse.fr\/articles\/cuisine\/une-salade-dautomne-comme-on-les-aime-puissante-fondante-parfumee-et-prete-en-40-minutes\">bon \u00e9quilibre<\/a> avec la b\u00e9chamel ou la sauce tomate :&nbsp;<strong>la p\u00e2te absorbe mieux les sauces<\/strong>, sans devenir p\u00e2teuse ou d\u00e9tremp\u00e9e.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-une-cuisson-longue-pour-une-mache-al-dente-et-un-visuel-bien-net\">Une cuisson longue pour une m\u00e2che al dente et un visuel bien net<\/h2>\n\n\n\n<p>Beaucoup de cuisiniers, m\u00eame professionnels, choisissent&nbsp;<strong>de ne pas pr\u00e9cuire les feuilles<\/strong>. \u00c0 condition d\u2019utiliser une p\u00e2te fine et de qualit\u00e9, cette m\u00e9thode fonctionne. Mais attention : le temps de cuisson au four devra \u00eatre ajust\u00e9,&nbsp;<strong>entre 45 et 55 minutes<\/strong>.<\/p>\n\n\n\n<p>Un conseil du chef :&nbsp;<strong>n\u2019utilisez jamais des sauces froides<\/strong>&nbsp;si vous optez pour cette m\u00e9thode. Privil\u00e9giez une b\u00e9chamel chaude et une sauce bolognaise mijot\u00e9e, pour \u00e9viter les zones dures ou s\u00e8ches dans la lasagne.<\/p>\n\n\n\n<p>Cette m\u00e9thode donne un r\u00e9sultat plus structur\u00e9.&nbsp;<strong>Les couches restent bien visibles<\/strong>, et la d\u00e9coupe est nette.
