Pour lui,&nbsp;<strong>tout commence avec le riz<\/strong>&nbsp;: le&nbsp;<strong>Carnaroli<\/strong>, pas un autre. Il le pr\u00e9f\u00e8re \u00e0 l&rsquo;Arborio, trop cassant et peu liant.<\/p>\n\n\n\n<p>Ensuite vient le geste \u00e9tonnant mais fondamental :\u00a0<strong>torr\u00e9fier le riz \u00e0 sec<\/strong>. Pas d&rsquo;oignon, pas de beurre, juste le grain, chauff\u00e9 \u00e0 vif pour le pr\u00e9parer \u00e0 accueillir le bouillon sans se briser. Ce pr\u00e9ambule discret change toute <a href=\"https:\/\/www.larousse.fr\/articles\/cuisine\/une-texture-soyeuse-des-poires-caramelisees-le-clafoutis-dautomne-qui-embaume-toute-la-maison\">la texture<\/a>.<\/p>\n\n\n\n<p>Puis il y a&nbsp;<strong>le d\u00e9glacage au vin blanc sec<\/strong>, l&rsquo;ajout&nbsp;<strong>progressif du bouillon<\/strong>&nbsp;chaud, et surtout, la&nbsp;<strong>mantecatura<\/strong>&nbsp;finale, cette \u00e9tape sacr\u00e9e o\u00f9 tout se joue. Et c&rsquo;est ici que Toni sort son atout :&nbsp;<strong>un beurre parfum\u00e9 \u00e0 l&rsquo;oignon<\/strong>, pr\u00e9par\u00e9 \u00e0 part, longuement, puis refroidi pour cr\u00e9er un&nbsp;<strong>choc thermique<\/strong>&nbsp;avec le riz chaud. Le r\u00e9sultat ? Une cr\u00e9mosit\u00e9 incroyable, sans morceaux d&rsquo;oignons.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Les ingr\u00e9dients pour un risotto \u00e0 l&rsquo;italienne<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>300 g de&nbsp;<strong>riz Carnaroli<\/strong><\/li>\n\n\n\n<li>1 petit verre de&nbsp;<strong>vin blanc sec<\/strong><\/li>\n\n\n\n<li>1,2 L de&nbsp;<strong>bouillon de l\u00e9gumes<\/strong>&nbsp;ou d&rsquo;eau chaude<\/li>\n\n\n\n<li>1&nbsp;<strong>oignon blanc<\/strong><\/li>\n\n\n\n<li>80 g de&nbsp;<strong>beurre doux<\/strong><\/li>\n\n\n\n<li>60 g de&nbsp;<strong>parmesan r\u00e2p\u00e9<\/strong><\/li>\n\n\n\n<li>Sel, poivre du moulin<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Les \u00e9tapes de pr\u00e9paration, comme un chef<\/h2>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Commencez par pr\u00e9parer le\u00a0<strong>beurre parfum\u00e9 \u00e0 l&rsquo;oignon<\/strong>\u00a0: faites fondre doucement le beurre dans une petite casserole, ajoutez l&rsquo;oignon finement \u00e9minc\u00e9, et laissez cuire \u00e0 feu tr\u00e8s doux pendant\u00a0<strong>30 minutes<\/strong>, jusqu&rsquo;\u00e0 ce qu&rsquo;il devienne translucide. Filtrez, laissez refroidir.<\/li>\n\n\n\n<li>Dans une casserole \u00e0 fond \u00e9pais, versez le riz\u00a0<strong>\u00e0 sec<\/strong>. Faites-le\u00a0<strong>torr\u00e9fier<\/strong>\u00a0\u00e0 feu moyen jusqu&rsquo;\u00e0 ce qu&rsquo;il cr\u00e9pite l\u00e9g\u00e8rement.\u00a0<strong>D\u00e9glacez avec le vin blanc<\/strong>, laissez \u00e9vaporer l&rsquo;alcool.<\/li>\n\n\n\n<li>Ajoutez le\u00a0<strong>bouillon chaud<\/strong>\u00a0louche par louche, en remuant doucement et en laissant le riz absorber avant chaque ajout. Cela prend environ\u00a0<strong>17 \u00e0 18 minutes<\/strong>.<\/li>\n\n\n\n<li>Quand le riz est\u00a0<strong>al dente<\/strong>, retirez du feu. <\/li>\n\n\n\n<li>Ajoutez le\u00a0<strong>beurre parfum\u00e9 \u00e0 l&rsquo;oignon bien froid<\/strong>, puis le\u00a0<strong>parmesan r\u00e2p\u00e9<\/strong>. Remuez vigoureusement. C&rsquo;est la\u00a0<strong>mantecatura<\/strong>, l&rsquo;\u00e2me du risotto.<\/li>\n\n\n\n<li>Go\u00fbtez, rectifiez l&rsquo;assaisonnement et\u00a0<strong>servez imm\u00e9diatement<\/strong>, bien chaud.<\/li>\n<\/ol>\n\n\n\n<h2 class=\"wp-block-heading\">Une cuisine de patience et de ma\u00eetrise<\/h2>\n\n\n\n<p>Le risotto de Toni Muzi n&rsquo;est pas une recette de plus. C&rsquo;est un&nbsp;<strong>rituel italien<\/strong>, o\u00f9 chaque geste a son importance, o\u00f9 la simplicit\u00e9 des ingr\u00e9dients rencontre la pr\u00e9cision des techniques. Oubliez la cr\u00e8me, les exc\u00e8s, les raccourcis : ici,&nbsp;<strong>on respecte le riz<\/strong>, on le nourrit, on le sent.<\/p>\n\n\n\n<p>Un risotto, c&rsquo;est un moment suspendu, presque m\u00e9ditatif.
